My Mom’s Best All Beef Meat Loaf


Prep time 15 min  -  Total time 120 min

Ingredients for 8 servings

         2 lbs Ground Beef (Best to use fresh and not frozen---frozen tends to fall apart)  
         1 Small finely chopped Onion  
         I Egg Lightly Beaten  
         1/2 Cup Cracker Crumbs, Bread Crumbs or Quick Cooking Oatmeal (this makes a creamier textured meatloaf)  
         1/2 Can of Tomato Soup. Reserve the rest in the can for the topping. Recipe for that will follow

Directions
Mix all ingredients together well. Shape into loaf and put in Loaf Pan.
Make a channel in the top of the meatloaf to pour topping into.

**Topping: Add 3 TBLS Brown Sugar, and fill the can to the top with Catsup. Mix well and pour over the meatloaf.
Bake for 11/2 hours at 350 degrees.
**Make a gravy if you wish (the fat tends to separate from the tomato sauce). Pour drippings from pan into pot and heat until boiling, Add 1 teaspoon flour and stir until thickened.
Serve with Mashed Potatoes or Rice, Rolls and a Vegetable.
