My Mother-In-Laws Applesauce Cake



My husband's father is diabetic and we all had a recipe for him to be able to eat. This is a dilicious diabetic Apple Sauce cake that doesn't taste diabetic at all.


SUGARLESS APPLESAUCE CAKE


Combine and Boil until no water remains and fruit is soft. Set aside:

1 C. Raisins 
1 C. Dried Fruit 
2 C. Water


Combine and set aside: 
2 C. Flour 
1 teas. Soda 
½ teas. Salt 
½ teas. Nutmeg 1 ½ teas. Cinnamon 

Combine these, then mix with Raisin Mixture:

2 eggs 1 C. Applesauce 
2 Tbsp. SPLENDA 
¾ C. oil 
1 teas. Vanilla 
½ C. Chopped Nuts 

Stir this mixture into dry ingredients.

Pour into Greased and Floured Bundt Cake pan and bake at 350° for 35-40 minutes

  1. The cake sounds delicious. However, I think it probably does have a lot of sucrose in it from the apple sauce. I think people sometimes forget how much natural sugar there is in fruit, and that a diabetic is as much affected by these natural sugars as by refined sugar from sugar cane or beets. For instance, raw apples with skin have about 2.07 grams of sucrose.
